Peanut Butter Pie

This is a favorite dessert that I have to serve on Thanksgiving Day or any gathering for that matter. I’m serious. I have family members that come just for the pie haha.

Ingredients
  

Nut Crust

  • 2 1/2 Cups Pecans, chopped finely
  • 1 Tbsp. Maple syrup
  • 2 Tbsp. Melted Unsalted Butter
  • 2 Tbsp. Coconut Sugar
  • 1 Tsp. Vanilla extract
  • A pinch of real salt

Filling

  • 1 1/2 Cups Peanut Butter (I use no sugar added)
  • 1 Tsp. Vanilla Extract
  • 1/2 Cup Coconut Sugar
  • 1 Cup Whipped Cream (Homemade is best)

Instructions
 

Make the Crust

  • Place the pecans in your blender. Pulse until you get a nice crumble texture.
  • Add the pecans to a bowl. Combine all of the crust ingredients and mix together.
  • Place the crust in a pie pan, pressing along the edges.
  • Bake at 325 degrees for 15-20 minutes.
  • Once the crust is golden and toasty looking, it’s ready. Let cool completely prior to filling it with the filling.

Prepare the Filling

  • Combine the peanut butter, vanilla, cream cheese and sugar.
  • Fold in the whipped cream with a spatula.
  • Pour filling into the crust. Grate dark chocolate shavings overthe top and enjoy!

Notes

Feel free to make any crust you like. Using real ingredients makes this pie literally so fluffy and like you're eating a big Reese cup without all the junk haha.
