Chocolate Chip Skillet Cookie

This chocolate chip skillet cookie takes the traditional cookie recipe up a notch. Serve with your favorite ice cream or homemade whip. Turn your next game night into a slice of extra chocolate goodness!
Servings: 8 slices

Ingredients
  

  • 1 cup grass-fed butter
  • 2 tsp vanilla extract (use the real stuff)
  • 2 eggs
  • 3/4 cup sucanat sugar (cane sugar)
  • 3/4 cup brown coconut sugar
  • 2 cups freshly-milled soft white wheat flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 cups semi-sweet or dark chocolate chips

Equipment

  • (2) 8 inch Cast Iron Skillet
  • Mixer

Method
 

  1. Combine the butter, sugars, vanilla and eggs in a bowl. Beat using either a handheld or stand-up mixer until nice and creamy.
  2. Gradually add the flour, salt and baking soda. Mix until all is combined. Should be a creamy texture.
  3. Add the chocolate chips and mix gently on the lowest setting or with a spatula.
  4. Pour the cookie mixture into a clean, seasoned skillet.
  5. Bake at 350° for 23-25 minutes, making sure the cookie doesn't burn. When it is a light golden brown, it should be done.
  6. Allow to cool for 10 minutes or so. Top with your favorite ice cream or a dollop of homemade whipped cream. Enjoy!

Notes

  • This recipe makes (2) 8 inch skillet cookies. If you’d like just (1) skillet, make the rest in actual cookies. You’ll get about 20 of them.Try making one big cookie in a 16” cast iron skillet.
  • Instead of the sucanat sugar - use maple syrup, coconut sugar or cane sugar.
