Homestead Chicken Noodle Soup

Gather up your ingredients around the homestead for this comfort Chicken Noodle Soup. The broth is so nourishing you can even give it to a loved one who may be feeling under the weather.

Ingredients
  

  • 2 Cups Carrots (diced)
  • 1 Box of Fettuccine
  • 1 Roasted Chicken
  • 6 Cups Chicken Bone Broth
  • 1 Tbsp Butter
  • 4 Cloves Garlic (minced)
  • 1 Tbsp Fresh Thyme (chopped)
  • 1 TBSP Fresh Italian Parsley (chopped)
  • 1 Bay Leaf
  • Salt & Pepper (to taste)

Method
 

  1. Sauté carrots and garlic in your pot. Cook until fork tender.
  2. Pour the bone broth into the pot and bring to a boil.
  3. Next, add the pasta and cook according to package directions.
  4. Add the herbs, salt, pepper and bay leaf.
  5. Combine the cooked shredded chicken to the soup. Stir together.
  6. Putting the lid on, allow to simmer for 30-40 minutes.
  7. Remove the bay leaf and serve immediately.

Notes

  • Add chopped Leeks or Celery for additional flavors and nutrients. 
  • You can also use chopped cooked chicken breasts instead of a roasted chicken. 
  • For extra creaminess, add 1/4-1/2 cup of heavy cream the last 10 minutes of simmering. 
  • Make your own pasta, if you like.
