When I think of chicken noodle soup, I think of comfort. I also think of a bowl of nutritious healing properties. There is nothing like the taste of chicken noodle soup made with real fresh ingredients.
What’s in Chicken Noodle Soup
The base of chicken noodle soup starts with homemade bone broth. I might grab chicken bones from a local farmer to make my broth. Alternatively, I can use the carcass from a roasted chicken I made for supper. Read all about the health benefits of bone broth.
The next thing you want to use is fresh vegetables. Carrots, celery and garlic are perfect to add to your nourishing pot of soup. These are easy to grow or I pick them up at local markets or farms.
You can either make homemade noodles (on my list to do) or buy a good quality pasta. I like using these fettuccine noodles. They are high in protein and non-gmo. Just add some herbs and spices and you’ve got a really nutritious meal. Oh, you also have to add a roll or slice of homemade bread to go along with this.

How To Make Chicken Noodle Soup
Chicken/Bone Broth
Chicken Noodle Soup is mainly so nourishing because of the bone broth. If you are making your own, I recommend using farm bones, mainly the feet from the chicken. That is where the good collagen is from. You can also use a fresh roasted chicken. If you don’t want to make your own, I recommend only two brands. They are Trader Joe’s Organic Chicken Bone Broth and Kettle & Fire Bone Broth. TJ’s has 20 grams of protein and K&F has 19 per carton. They both are very clean ingredients as well. I usually will roast a chicken and just pull the meat off and add it to the soup.
Vegetables
I love using fresh vegetables that I pick from my garden. If they aren’t in season, then I will go to a local market. Chicken noodle soup mainly has diced carrots, celery and garlic. You can also add in some chopped leeks for additional flavor.
- Sauté all the vegetables and garlic in the dutch oven/soup pot. Cook until fork tender and turn to simmer. Add in salt and pepper.
Pasta
My goal next year is to start making my own pasta. I know it’s so easy, just flour and egg. I’ve just decided not to take on another learning project until I get a few other things finished. If you make your own pasta, then the best kind for this soup is a fettuccine noodle. You can make them thick or thin, just depends on your preference. For now, I love using these noodles. I mentioned them above so go check them out. They have an egg noodle and a garlic fettuccine one.
2. Add the bone broth and bring to a boil.
3. Drop the pasta in the broth mixture and cook according to the package directions. Next, add all the shredded/diced chicken, herbs/spices and stir it all together. Continue cooking on simmer with the lid on for 30-40 minutes. Serve in a bowl with a nice piece of bread.

How to Store Leftovers
Take leftovers and store in a glass bowl with lid. When reheating, you might need to add more bone broth. It will naturally “gel up” when it reaches a cold temperature. The noodles love soaking up this goodness. Store leftover chicken noodle soup in the fridge for 3-4 days.
Homestead Chicken Noodle Soup
Ingredients
- 2 Cups Carrots (diced)
- 1 Box of Fettuccine
- 1 Roasted Chicken
- 6 Cups Chicken Bone Broth
- 1 Tbsp Butter
- 4 Cloves Garlic (minced)
- 1 Tbsp Fresh Thyme (chopped)
- 1 TBSP Fresh Italian Parsley (chopped)
- 1 Bay Leaf
- Salt & Pepper (to taste)
Instructions
- Sauté carrots and garlic in your pot. Cook until fork tender.
- Pour the bone broth into the pot and bring to a boil.
- Next, add the pasta and cook according to package directions.
- Add the herbs, salt, pepper and bay leaf.
- Combine the cooked shredded chicken to the soup. Stir together.
- Putting the lid on, allow to simmer for 30-40 minutes.
- Remove the bay leaf and serve immediately.
Notes
- Add chopped Leeks or Celery for additional flavors and nutrients.
- You can also use chopped cooked chicken breasts instead of a roasted chicken.
- For extra creaminess, add 1/4-1/2 cup of heavy cream the last 10 minutes of simmering.
- Make your own pasta, if you like.
