Wash and cut your potatoes. Peeling is optional, although, you will be eliminating vital nutrients if you do end up peeling them.
Place potatoes in a bowl.
Scoop 2 tbsp of grass-fed beef tallow in the bowl.
Using your hands, massage the tallow and salt/pepper until the potatoes are evenly coated.
Spread the fries on to a parchment paper lined baking sheet.
Bake at 400 degrees in the oven for 25 minutes. Turn the fries over.
Bake for another 25-30 minutes. Once the fries are golden in color, they are ready.
Pull out of the oven and allow to cool for a bit.
Eat the fries just like they are, sprinkle with fresh chopped parsley or extra salt.
