It’s Strawberry 🍓 season here in the South. I went pickin’ recently and what better thing to do than make this Strawberry Vanilla Jam. Fresh picked Strawberries, Real Maple Syrup and notes of Madagascar Vanilla. The flavors are delicious! This jam is great on homemade buttermilk biscuits, oatmeal or even ice cream. I like it on a spoon just out of the jar!

Hello February! When it’s still windy and freezing

Hello February! When it’s still windy and freezing out, “do what you can, with what you have.” That’s my saying and I live by it. I made a batch of my buttermilk sourdough biscuits and scrambled some eggs this morning. We scraped the bottom of a jelly jar and drizzled honey on our biscuits. Grateful for electricity, cold running water and propane so I could cook. Everyone, including the doggies, were enjoying the coziness this morning. I am happy to say we finally have hot water and I can do all these dishes now.

We were planning to come up to our Georgia property this weekend a few weeks ago. We weren’t in the direct path of this winter storm so we thought it would be fun for some cooler weather. We did get snow flurries and wind that bite’s you in the face 🥶. I love our little camper. It was frigid in here this morning. Truth be known, we bought it for this oven. I can cook anything in here. These biscuits always come out super fluffy. We’re having them with leftover white chicken chili that I made last night.

Have you ever wondered if winter was designed so we would slow down? We go go go all year long, maybe winter is a time for resting. I like to plan my spring garden now. I also have a cross-stitch piece I’ve been meaning to start. Now would be a good time. Anyways, I hope you are getting some much needed relaxation and spending time with your loved ones. Let’s see what this new month will bring.

Winter Storm Gianna. I don’t have a lot to documen

Winter Storm Gianna. I don’t have a lot to document. We came up to our Georgia property to see snow but only received flurries and beyond freezing temps. It has been great. The wind was whipping around and I thought for a minute in the middle of the night our camper was going to get swooped up 🥴.

We did wake up to no hot water. So thankful we had running cold water, power and propane so I could cook breakfast this morning. At my age, I’ve learned over the years to be prepared for whatever may come my way. If you don’t have everything you need, make the best of it. I have a saying and truly live by it - “ Do what you can, with what you have.”

Back home, I’m grateful for family taking care of our farm animals, securing our pipes and all the things. I have a lot of family in NC that are having way too much fun snow sledding. I wouldn’t mind being on a snowmobile again. Maybe one day I will get to do that. Meanwhile, my son and his sweet little family are snowed in at their cabin in Gatlinburg. I’m sure it’s magical and they are having fun as well. Stay warm folks! ❄️❤️

This recipe went viral last year and ya’ll loved it! I seriously am bullied 😂 into bringing this everywhere I go and who doesn’t like bacon. It’s so simple to make but the flavors just melt in your mouth. It’s not only perfect for the Super Bowl but we love it at game nights as well. It really makes a great appetizer for any event. Since it’s cold everywhere (even here in Florida), this will warm you up!

My dogs not only love the smell of when I’m baking, they love how it tastes too. The fiber and vital nutrients are so good for them. I’ve often wondered if that’s why my almost 15 year old Australian Cattle dog is still here haha.
