I don’t think I’ll ever be able to go to Italy

I don’t think I’ll ever be able to go to Italy 🇮🇹 so I’m bringing Italy to my table! I recently found that @giadadelaurentiis has a wonderful line of Authentic Italian food on her website @thegiadzy. I’ve been watching Giada for years on @foodnetwork so my mom and I were really excited to get an order placed.

I wanted these fun shaped little lasagne noodles but had no idea what I was going to make with them haha. So, I create this recipe for Lasagne Soup. It’s so simple and absolutely delicious. I served it with a loaf of my sourdough bread. See below for my recipe and I’ll be adding it to my blog soon.

Lasagna Soup

Ingredients:

1 lb Ground Chuck or Sirloin
A jar of your favorite spaghetti sauce ( I use my homemade canned or I love Rao’s Roasted Garlic)
2-3 tbsp. Italian Seasoning
1 bulb Roasted Garlic
Lasagna Noodles - broken or buy Giada’s
4 cups Chicken Bone Broth
1 cup Ricotta Cheese
1/4 cup freshly grated Parmesan Cheese
1/4 cup freshly grated Mozarella Cheese
Fresh Basil

Directions:

1. Brown your meat on med-low heat.
2. Using a large pot or dutch oven, add the spaghetti sauce and bone broth to your pot. Turn heat on medium - high.
3. Add the seasoning & garlic. Give it a good stir.
4. Meanwhile, boil the noodles according to the package.
5. Drain the noodles and add to the soup. Stir it all together.
6. Let simmer for around 30 minutes.
7. Mix all the cheeses together in a bowl.
8. Ladle into bowls. Top with a dollop of the cheese mixture and basil.
