How to Make Fresh Milled Flour Dinner Rolls
This recipe is actually my Basic Whole Wheat Bread Recipe. It makes 2 loaves of bread but I like to make 1/2 a pan of rolls. You’ll get a smaller loaf but I’m ok with that. Sometimes, I’ll make a bigger loaf and just a few rolls. Or, I may make just all dinner rolls. It just depends on what my needs are at that time.
- Dissolve the yeast in warm water. Stir until nice and bubbly.
- Mix the flour and salt in your bowl. Make a well in the center.
- Add the honey and olive oil to the lukewarm water. Stir together. Tip: If you add the olive oil first, the honey will not stick to the measuring spoon.
- Pour the yeast into the well of the flour and then add the honey/oil mixture. Using your Danish whisk, stir together until everything is mixed.
- Now, it’s time to knead the dough. If doing it by hand, it’s about 600 strokes. In a standup mixer, it will take about 10 minutes. Cover with a damp towel and let rise for 1-2 hours. It should double in
size. - With a wet finger, poke a hole into the dough. If the hole doesn’t fill in, you are ready for the next step.
- Gently punch down the dough and pull it from the sides, forming a ball. Cover with the same towel and let rise again, usually 30 minutes.
- Grab an 8×4 loaf pan and butter it up. Sprinkle flour on a clean surface and place your dough on it.
- Now, gently press the dough onto the counter in the shape of a rectangle. Try not to mess with the gluten structure too much. Using a bench scraper, divide the dough into even square sections. Now, start rolling them into a ball. Place them on a parchment lined sheet and cover with the same towel. Let rise until the rolls have puffed up.
- Bake in the oven for 30 minutes at 350 degrees.

How to Store Fresh Milled Flour Dinner Rolls
These dinner rolls can be stored on the counter for a few days (if they even last that long haha). Depending on how many I have, I just toss them in a ziploc bag. Fresh milled flour will mold quickly because there are no preservatives.
Freezer Storage
You can store these fresh milled flour dinner rolls in the freezer as well. They will keep fresh for 1-2 months. Allow to cool, then place them in a freezer safe container. I put 2-3 in one quart size freezer ziploc bag.
To re-heat: Wrap the rolls in foil and place in a 300 degree oven. You aren’t baking the rolls but just need to heat them up for 10 minutes or so. They will be just like they are when you originally baked them.

Baker’s Tip:
If you like to travel but don’t like to eat breakfast at the hotels, I’ve got a tip for you.
I freeze a lot of these rolls. If I know I am going out of town, I pack a cooler with ice packs. I’ll grab how many rolls I will need for breakfast time. Usually, hotels have mini-fridge’s as a standard choice these days. Most of them serve some kind of egg with bacon or sausage. I end up making me an egg sandwich. I’ll either bring my avocado mayo or spread butter on the sandwich from the hotel buffet. I stay clear of all the sweetened cereals, waffles and bagels. This breakfast sandwich will fill me up and keep me satisfied until lunch.
Troubleshooting
It may take a little bit of playing around with different flour and water. Not all fresh milled flours absorb water the same.
Practice with different flours. This recipe is using hard white wheat flour. I use 2 1/4 cups of water. If I am using one of the heritage brands above, I might need more or less water. When testing the flour’s hydration point, start pouring water slowly until you get the right consistency.
What if my bread isn’t rising? What is your temperature set on in your kitchen? It’s best to have your thermostat set at 70-75 degrees. If it’s winter time, I usually set my dough bowl on the fireplace. During the hotter months, I’ll set my bowl on the porch. Keep this in mind when you are calculating your rising times.

Notes
- If you are using another flour, you may need to add more/less water as different flours require different amounts of hydration.
- You can substitute the honey for any sweetener of your choice.
- These fresh milled flour dinner rolls freeze very well. Can stay fresh for 1-2 months in the freezer.
