Well, after reading the ingredients, I started making my own from scratch. I’m excited to share my Fudgy Brownies Made With Fresh Milled Flour. In less than 10 minutes, you can whip up a batch too.

How To Make Fudgy Brownies Made With Fresh Milled Flour
- Preheat oven to 350 ºF.
- Line your baking dish with parchment paper or grease with butter.
- In a bowl, whisk together the eggs, sugar and butter. If you are using a stand-up mixer put it on the 2-4 setting.
- Melt 5 oz. chocolate chips either/butter on the stove using a double boiler method or in the microwave. When it’s all melted, add it to the above ingredients.
- Add the vanilla. Blend it all together.
- Now, add the flour. Mix that all together.
- Combine the cocoa powder and salt, stir all that together.
- Add the remaining chocolate chips and stir until thoroughly blended.
- Pour the batter into the pan, using a spatula to spread it all evenly.
- Bake in the oven for 25 minutes.
- Allow the brownies to cool.
- You can cut the brownies into squares once they have cooled.
- Eat as is or add a scoop of vanilla ice cream on the side.

Are These Brownies Ooey Gooey?
Yes, these brownies are so ooey gooey. I made them using fresh milled flour along with a few different steps that give them that fudgy center. When I first made them, my mom told me they were a 20 out of a 10. Thanks mom. I’ll take it! They are different than my Simple Brownies Made With Fresh Milled Flour. Those are more cake like and perfect if you want a frosting on top.
What Makes These Brownies Fudge Like
I use the same recipe as my Simple Brownies Made With Fresh Milled Flour but give it a few tweaks. You will have homemade fudge brownies that will melt in your mouth in no time.
- Instead of 3 whole eggs, add 2 eggs and 1 egg yolk. This will give them that fudge texture you are looking for.
- I used grass-fed butter in these brownies. I think it really adds to the other components to make these more fudge like.
- Melt your chocolate chips – Fill a saucepan with water. Place a heat-safe bowl (that’s a little bigger than the pan) on top of the pan. Bring your water to a boil and then turn the heat down to medium. Meanwhile, add your chocolate chips and 2 tbsp of butter to the bowl. Stir together until it’s all melted. Add to the wet ingredients and stir together until nice and creamy.
- Only use 1 cup of flour. The more flour will give that cake consistency.
- Omit the baking powder. I only used it in the cake brownie recipe to assist with the rise. The fudge brownies will not require it.
Can a Chocolate Baking Bar Be Used?
Yes, I love the richness of a good quality chocolate bar. Just take your chef’s knife and rough chop the chocolate. It will come out as flakes. You can melt this just as you would chocolate chips. Adding a 1/4 cup to the batter will give good even chocolate throughout the brownie.

Yes, feel free to substitute fresh milled flour with all-purpose. Instead of 1 cup, back it down to 3/4 cups of flour.
I used a stoneware brownie pan (9×13) I’ve had for 20+ years from Pampered Chef. Other options would be glass (you might need to bake a little longer). A metal 9×13 would work as well. If you use a larger pan, the brownies won’t be as tall.
Once cooled, store them in a glass container with a tight fitting lid for 2-3 days. They can also go in the freezer for 1-2 months.
The corners have that perfect crispness so you will definitely want to grab them before they disappear. The inside brownies are so soft with a flaky top. Everyone will sure to be pleased.

Ingredients
- 1 1/2 cup Fresh Milled Flour (I used soft white wheat flour)
- 1/4 cup Cocoa Powder (unsweetened)
- 1 tsp Salt
- 1 1/4 cup Coconut Sugar
- 1/2 cup Grass-Fed Butter
- 2 Eggs (Large)
- 1 Egg yolk
- 1-2 tsp Vanilla Extract
- 10 oz Chocolate Chips (I used ones that were 55% cacao)
- 2 tbsp Grass-Fed Butter (to melt with the chocolate chips)
Instructions
- Preheat oven to 350°F.

- In a bowl, whisk together the eggs, sugar and butter. Stir by hand and cream together. If you are using a stand-up mixer put it on the 2-4 setting.
- Add the vanilla extract.
- Now, add the flour. Stirred until blended well. This may take a few minutes since it’s all by hand (unless you are using a mixer).
- Melt 5 oz. chocolate chips/butter either on the stove using a double boiler method or in the microwave. When it's all melted, add it to the above ingredients.
- Combine the cocoa powder and salt. Stir/mix all that together until the ingredients are mixed well.
- Add the remaining chocolate chips and stir until thoroughly blended.
- Pour the batter into the pan, using a spatula to spread it all evenly.

Notes
- If you use a larger pan, like a 9×13, you’ll get more brownies but they won’t be as tall.
- These Fudgy brownies can be mixed by hand in just a mixing bowl.They can also be made in a stand-up mixer. I use the paddle attachment with the rubber spatula and start at the #2 setting and gradually go to #4, if needed.
- Just double the recipe if you need to make a bigger batch.
